• 250g caster sugar
  • 2 tbsp grated ginger
  • 1 lemon , zested and a few thin slices to serve
  • Angostura bitters
  • 1 bottle Champagne or sparkling wine, chilled

 We know Champagne doesn’t need any embellishments, but this cocktail is worth a try

Ginger Champagne Cocktail


  • Put the caster sugar and 250ml water in a saucepan and bring to the boil. Add the grated ginger and lemon zest. Cool, then strain out the bits.
  • Pour into a jug, add a couple of shakes of Angostura bitters and top up with the bottle of chilled Champagne or sparkling wine. Add the halved, very thin slices of lemon.
